Mix in your favorite vegetables, break out your special chili seasoning and get that crock pot going! The combination of vegetables and beans makes this a centenarian powerhouse dish and it’s perfect for winter – it will warm you up from the inside out. Plus, you can leave it cooking while you’re at work or school and it’ll be ready for you when you get back home.

  • 4 tsp olive oil
  • 1 large onion

  • 8 cups vegetable stock (or 4 cups veggie stock and 4 cups water)
  • Salt and pepper
  • 1 package Beyond Meat hamburger (or soy crumbles), optional
  • 1 avocado, cubed, for garnish (optional)

Directions

  1. Soak beans overnight.
