Curried Beans

Complex in its flavor profile, this recipe incorporates sweetness from the apple, savoriness from the onion and curry, and an earthiness from the beans. Every flavor is well-complemented by the next to build a full bite and a full stomach.

Ingredients

  • 3 cups beans or 2 (15oz.) cans of beans, drained and rinsed (kidney beans or a mix of beans)
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp whole-wheat flour
  • 2 tbsp curry powder
  • 1 clove garlic, minced
  • 2 cups vegetable stock
  • 1 apple
  • ½ cup chopped dates
  • juice of ½ lemon

Directions

  1. Cook onion in oil until golden, add salt, flour, curry powder, and garlic, and blend well.
  2. Add stock and cook, stirring constantly until thick.
  3. Peel the apple, cut into eighths, and add it to the sauce with the dates, lemon juice, and beans.
  4. Heat thoroughly and serve.

    Serves 4
