Dr. Michael Greger’s Fast, Healthy, and Delicious “Collardritos”

Michael Greger, MD, is a Cornell graduate, physician, and internationally recognized speaker.   His latest book is How Not to Die is arguably the best guide ever written if you want to live a longer, better life. “Our diet is the number one cause of premature death and disability,” he writes and then goes on to reveal the “Daily Dozen,” foods that will add years to your life. Here’s a favorite recipe from Dr. Greger himself!



  • 1 package of corn tortillas
  • 1 can of beans
  • 1-2 spoonfuls salsa
  • 1 handful of salad greens
  • 1 avocado
  • 2-4 leaves fresh collard greens (optional)
  • 1 bunch fresh cilantro (optional)


  1. Toast some corn tortillas.
  2. Mash some canned beans on them with a fork and add a spoonful or two of jarred salsa.
  3. If on hand, add fresh cilantro, salad greens, or avocado to top it all off.
  4. For an added twist, steam a few collard green leaves and use them as burrito wraps to replace the tortillas.
