Wake up with the sunrise – or maybe just with this breakfast smoothie that mimics the sunrise – sleep is important too! This delicious tropical smoothie is easy to throw together before work and is also pretty enough to drink on a leisurely Sunday morning as you downshift before the craziness of the week sets in.

Ingredients

For mango-pineapple layer:

  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup frozen pineapple
  • 1/2 cup frozen mango
  • 1/4 cup coconut yogurt

For strawberry-banana layer:

  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 cup frozen strawberries
  • 1 frozen large banana
  • 1/4 cup coconut yogurt
  • shredded coconut, for garnish (optional)

Directions

  1. Combine all mango-pineapple ingredients in a blender and blend until smooth.
  2. Pour into 2 glasses and place in the freezer.
  3. Rinse out blender and combine all strawberry-banana ingredients in the blender and blend until smooth.
  4. Pour on top pineapple-mango mixture and top with shredded coconut, if desired.

Note: Sub almond yogurt or soy yogurt for the coconut yogurt, if desired.

Yield: Serves 2

Per serving: 222 calories, 2.5g protein, 5.3g fat, 5.2g fiber, 30.9g sugar, 87.5mg sodium
