Akin to a warm hummus, this recipe pairs well with pita bread. It’s also a great appetizer to serve as a dip alongside Ikarian-Style Sourdough Bread. Lentil dip will be your new go-to for parties! Lentils include beneficial nutrients like fiber, protein, minerals and vitamins, they are low in calories, and contain virtually no fat. Lentils are a popular dish around the world for their nutritional benefits and easy preparation.

Ingredients

  • 1 (15 oz.) can or 1½ cups lentils
  • 1 cup low-sodium vegetable stock
  • 2 tbsp olive oil
  • 2 tbsp flour
  • 2 small onions, chopped
  • ¼ tsp powdered ginger or 1 tbsp minced ginger
  • ½ tsp chili powder
  • Juice of ½ lemon
  • Salt and paprika, to taste

Directions

  1. Cook the onion in the oil for 5 minutes, stir in the flour, and add 1 cup of stock, cook and stir over medium heat until boiling.
  2. Combine drained lentils with this sauce. Season with ginger, chili powder, lemon juice, salt, and paprika.
  3. Place in oven-proof dish and keep hot in 300°F oven until ready to serve.
