Tofu Musubi

Inspired by the popular Hawaiian dish, Spam musubi, Chef Alyssa Moreau from Blue Zones Project Hawaii created this plant-slant-friendly version that would be great for a quick lunch or shareable snack.

Ingredients

4 nori sheets
2 cups cooked brown rice
1 14-oz package of extra firm tofu, cut into 8-9 pieces length-wise
3 avocados, optional
For sauce:
2 cloves garlic or pinch of garlic powder
pinch of onion powder
1 tsp Sriracha or Thai chili paste
2 tbsp low-sodium shoyu or low-sodium tamari
1 tbsp sesame oil
1 tbsp pure maple syrup or honey
1 tbsp rice vinegar

Directions

  1. 1. Blend or mix sauce ingredients. Pour over tofu in a baking dish.
    2. Bake at 400 degrees for 30-45 minutes or until dry and browned.
    3. Cut nori in half. Place musubi mold over nori. Put in 2 tablespoons of brown rice. Add tofu slice and top with avocado, if using. Push down the top of the musubi mold. Roll nori around musubi and seal with hot water.
